Preparation
  1. Chop the onion into fine pieces. Add to saute pan.
  2. Chop the Jalapeno peppers. Add to saute pan. *De-seed if you like, we chose not to.
  3. Chop Bell peppers. Add to saute pan.
  4. Slice & quarter the squash. Add to medium bowl.
  5. Grate the cheese. Add to large mixing bowl.
  6. Open the bag of chips to release the air. Crush the chips while still inside the bag. Add to the top of the cheese in the large mixing bowl.
  7. Add Worcestershire sauce to your saute pan.
  8. Add butter to your saute pan. *Slice the butter up into small pieces
  9. Add water to the squash in the medium bowl until covered/submerged.
Cooking
  1. Add the squash to the stove on medium heat & bring to a boil. Once boiling, cook for 10 minutes.
  2. Add the saute to the stove on low heat & stir occasionally to mix in the butter & Worcestershire sauce.
  3. While the squash & saute is on the stove, mix your spices in the small bowl until you reach an even blend.
  4. Mix in the spice blend into the saute (which is still on the stove cooking) & stir. This allows the spices to infuse into the saute for extra flavor.
  5. Whisk your two eggs while the squash & saute are still on the stove.
  6. Once the squash has boiled for 10 minutes, remove & drain in the colander for 2-3 minutes. Also kill the heat on the saute at the same time.
  7. **IMPORTANT STEP: Add the squash, whisked eggs, and saute mix together at the same time! This allows the heat from the squash & saute to melt the cheese in the large mixing bowl. Stir & mix the blend for a few minutes until you reach a well-combined mix and the cheese has melted.
  8. Add a light coating of PAM to both casserole dishes and begin spreading out the mixture into the dishes. You should have enough mix to fill up 1 large and 1 small casserole dish. The spread thickness should be roughly 1-1.5" thick.
  9. Bake in the oven @ 350 degrees for roughly 40 minutes. Check around 30-35 minutes in. Once it starts bubbling on the sides, you are done!
